Tropical Superfood Smoothie Bowl

Hi everyone! My name is McKel, some of you may know me from my blog Nutrition Stripped, which is a plant-based, gluten free food and nutrition blog. I’m here today to share with you all a delicious green tropical smoothie bowl using amazing superfoods from Organic Burst. I like to call this one the Tropical Superfood Smoothie Bowl.

Smoothie bowls are super thick and creamy smoothies, filled with raw fruits and veggies, superfoods, healthy fats, and plant-protein. It’s designed to be a meal in a bowl- and a delicious one at that! I hope you all enjoy this recipe I developed just for you all here at Organic Burst.

What about the superfoods? I use spirulina and baobab powder, both of which are delicious and nutrient dense superfoods for this tropical smoothie. If you’ve never tried baobab before it tastes similar to a citrus fruit with bright flavors and it’s even orange in color. More importantly than it’s great taste, is the nutrition profile. Baobab contains heaps of vitamin C, magnesium, potassium, and calcium. Couple the vitamin C found in baobab with the iron in spirulina and you have a better chance of increasing iron that’s absorbed in the body.

Spirulina on the other hand is dark green, it’s a blue-green algae high in minerals, amino acids (a.k.a. protein!), vitamin A, iron, chlorophyll, and magnesium. It’s an excellent addition to plant-based meals to boost the protein content since spirulina is about 60-70% protein. Spirulina has a mild flavor; to me it tastes like a blend of chocolate, seaweed, and vanilla- odd combination right? I promise, when mixed when your favorite smoothie it tastes wonderful.

I know smoothie bowls may seem like an odd thing to try at first, especially if you’re not used to eating green smoothies, but I promise you’ll love them! I personally have these most mornings for breakfast because they remind me of a big bowl of ice cream with granola on top or even a bowl of yogurt with granola on top- both of which I don’t consume because I’m dairy free, so these are perfect replacements.

Ingredients:

  • 2 cups raw spinach
  • 1 frozen banana
  • 1 cup frozen pineapple
  • 1 tablespoon almond butter
  • 1/2 cup coconut water
  • 1/2 cup ice (add more to thicken to your liking)
  • 2 teaspoons Organic Burst Baobab powder
  • 1 teaspoon Organic Burst Spirulina powder
  • Toppings: shredded coconut, or goji berries

Directions:

Simply blend all of the ingredients into your Vitamix/Blendtec or high speed blender until thick and creamy. Add coconut water as needed to thin to your desired consistency or add ice to thicken to desired consistency. The goal is to have a thick and creamy texture similar to ice cream. Enjoy with any toppings you love!

TIP // this is a meal in a bowl, if you’d like this to be lower in calories or lower in sugar, simply add half of the amounts of fruits to your liking.
